Biker
Chef is a teacher, Biker Chef is a student.
He is devoted to the power of cooking, to
the idea that food can be a force to unite
the people. On his travels he is letting the
land guide him, letting the food speak to
him, learning the right way to add his own
voice to the chorus and rejoice in the beauty
of a new and wonderfully prepared meal. In
each episode he uses the Tome as a 'mystery
map' to gather ingredients from the featured
locale, absorbs a particular cooking method
from a Specialist Cook, pulls the needed spices
from the Crate and uses the Zen of the road
to mix seemingly random tastes in his mind.
At the end of the episode the Biker Chef uses
his free form, often described as mystical
cooking abilities to create a great tasting,
unique dish that anyone can make at home.
In the cuisine storytelling traditions of
"Like Water For Chocolate," "Eat
Drink Man Woman" or "Big Night"
the dishes of "Biker Chef" transcend
mere sustenance to a higher plane of human
appreciation and togetherness.

CHEF'S NOUVEAU SLOPPY JOE
Ingredients
for 4 Servings:
Native
American Fry Bread (Specialist Cook will show
how to make it at home)
4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/2 cups warm water (110 degrees F/45 degrees
C)
4 cups shortening for frying
(note: amount of ingredients makes 12 fry
breads)
Dirty
Rice
1 cup of long grain Basmati rice
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, diced
2 garlic cloves, minced
1 tblsp extra virgin olive oil
pinch of sea salt and black pepper
Jerky Smoke Sweet Sauce
4 large pieces of plain beef jerky, chopped
fine
2 eight oz. cans whole, peeled Italian tomatoes
(drain, then puree in blender)
1 tblsp cider vinegar
2 tblsp clove honey
1 tblsp extra virgin olive oil
1 tsp garlic salt
1 tsp onion salt

Prime Flank Steaks
Wasabi,
Pomegranate Marinade for steaks
1 tsp wasabi powder
1/4 tsp Peychouda bitters
1 cup pomegranate juice
1 cup Hickory Grand Marnier Chips
Hickory chips soaked in 1/2-cup Grand Marnier
and 2 cups water
Barbecue
pit prepared with mesquite charcoal.
Prepare
the beef marinade in a bowl, mix wasabi powder
and Peychouda bitters into the pomegranate
juice. Put flank steaks in a large zip lock
bag, pour in the marinade, zip lock and let
set for a few hours.
Prepare
Hickory Grand Marnier smoke chips. Add 1/2
cup Grand Marnier to two cups warm water.
Sprinkle in hickory chips, stir until chips
are completely soaked. Let set for a few hours.
Prepare
Native American Fry Bread. Combine flour,
salt and baking powder. Stir in 1 1/2-cups
lukewarm water. Knead until soft but not sticky.
Shape dough into balls about 3 inches in diameter.
Flatten into patties 1/2-inch thick and make
a small hole in the center of each patty.
Fry one at a time in 1 inch of hot shortening,
turning to brown on both sides. Drain on paper
towels.
Prepare
the Jerky Smoke Sweet Sauce. Chop 4 large
pieces of plain jerky. Add olive oil to a
3-quart saucepan. Turn flame on medium. Add
chopped jerky and let cook to flavor the oil.
Add garlic and onion salt. Drain 2 eight ounce
cans of whole peeled Italian tomatoes and
puree in blender. Slowly stir in the tomato
sauce to the jerky bits and oil. Bring to
a gentle boil while still stirring then lower
heat. Stir in cider vinegar and clove honey.
Cover and let simmer with an occasional stir.
Prepare
Dirty Rice. Cook 1 cup of Basamati rice in
rice cooker. Heat olive oil in a large skillet.
Add garlic, sea salt and pepper. Add red and
green chopped bell pepper. Add diced onion.
Cook until tender. Add cooked Basamati rice,
stir briskly so rice is mixed thoroughly with
oil, peppers and onion. Cover and take off
heat.
Prepare
the mesquite coal barbecue pit. Add Hickory
Grand Marnier chips. Put marinated flank steaks
on grill and cover. Flip after 3-4 minutes.
Cover for 3-4 minutes.
Put
hot Fry Bread on plate. Add piece of barbecued
flank steak. Add heaping serving spoon of
dirty rice on top and smother in Jerky Smoke
sauce. You are now ready to enjoy Biker Chef
's Nouveau Sloppy Joe.
